January is Oatmeal Month. For those of you
who hate oatmeal (possibly because of memories of bowls
full of lumpy heavy oats that weighed you down all day),
be of good cheer. You have many oatmeal options, such as
using oat flour in many recipes such as Oat
Flour Muffins (or many other recipes using oats in our
Recipes section), grinding
oatmeal in your K-Tec Kitchen
Mill to coat chicken and fish, using oatmeal as a topping
for fruit crisps or crumbles, and using oats to make meatloaf
heartier. Whole oats can be substituted for one-third of
the flour in foods such as pancakes, quick breads, cookies,
and yeast breads.
All these tasty oatmeal options will make
your heart feel great, literally. The soluble fiber inside
the whole-grain oats protect against heart disease, as well
as several cancers. Three grams of soluble fiber in oats,
eaten per day, lower blood cholesterol and protect against
heart disease. The insoluble fiber, like pineapple juice
and ginger, soothes the digestive system. Oats also slow
digestion, so you feel full faster and lose weight--there's
a reason why Mom fed you heaping bowls of oatmeal! Also,
oatmeal is low-glycemic, which means low in bad carbohydrates.
Grind some carob (or brown sugar if you must) over your
oatmeal, or add a dash of ginger and pineapple juice, and
enjoy!
